There is some technology element to it, a lot of which comes inherited from the parent company who have been using it for decades. Robotic servers, automated dishwashing systems, the rotating belt, etc.
In my opinion, these are not a huge part of the story. They are cool, do save and/or have the opportunity to save some bps on labour but this will be more influential at scale, not this size.
They are just a restaurant chain to me, not a tech company.
